Greek Sheet Pan Shrimp with Roasted Vegetables
Can we talk about dinner for a minute? Because I know that little voice that starts up around 4pm telling you that you’re behind, you didn’t plan anything, and now everyone’s going to be disappointed. I want you to hear me: you are NOT behind, and dinner does not have to be complicated to be good. This is one of my favorite ways to eat this way- if you haven’t read why the Mediterranean diet is my go-to after 40, that’s a good place to start before you dive into this one. This Greek sheet pan shrimp with roasted vegetables is one pan, ten minutes of chopping, and the oven does the rest. That’s it. That’s the whole secret!
Baby Steps, Not Perfection.
You do not have to peel your own shrimp to make a nice dinner tonight. I mean it! Grab a bag of shrimp that’s already peeled and deveined- it’s sitting right there in the freezer section waiting for you. That’s the beauty of a good sheet pan shrimp with vegetables recipe- almost none of the hard parts are actually hard. Let it thaw in some cool water while you do the next tiny step. We are not doing anything the hard way today, sweet friend. Baby steps get dinner on the table just as well as the hard way does.
This Sauce Is Doing All The Work For You.
I want you to feel so proud of yourself when you make this sauce, because it looks fancy and it takes about ninety seconds. Whisk together lemon juice, a little oregano, some minced garlic, garlic powder, and pepper, then drizzle in olive oil while you whisk. That’s your sauce, and it’s the real reason this mediterranean sheet pan shrimp tastes like something special instead of just another weeknight dinner. You’re doing great!
Chop What You Have- Not What The Recipe Says.
Go look in your crisper drawer right now. Whatever’s in there that’s looking a little sad and needs to be used up- that’s your vegetable for tonight. A pepper, a zucchini, half an onion, whatever you’ve got. This is not a test you can fail, and that’s the whole beauty of roasted vegetables and shrimp- there’s no wrong combination. Cut it into pieces that are roughly the same size so everything cooks evenly, and don’t you dare stress over making it perfect. Progress, not perfection, applies to chopping vegetables too!
One Bowl. One Pan. That’s The Whole System.
Toss your vegetables right into the bowl with your sauce- or better yet, put a lid on that bowl and give it a good shake so you don’t even have to dirty a spoon. Spread it all out on your sheet pan, tuck your shrimp and a little jar of olives in between the veggies.
Now Go Do Something Else For Yourself.
Set your oven to 400°F and let this bake for about 35 minutes while you go sit down, or fold a load of towels, or do absolutely nothing at all. You have earned it. If you want a little extra golden color at the end, slide it up near the broiler for just a minute or two- but stay close, because that’s not a “walk away and check your phone” kind of minute.
Set The Table And Call Everybody In.
Pull it out of the oven and just serve it right off the pan- crusty bread on the side is lovely for soaking up that sauce, but it is not required. You made a real dinner, from real food, without losing your mind over it. That is worth celebrating, my friend.
Greek Sheet Pan Shrimp- The Recipe Card
Cook time: 35 minutes at 400°F
Ingredients:
- 1 yellow pepper
- 1 red pepper
- 1 medium zucchini
- 1/2 onion (white or red)
- 4 cloves garlic, minced
- 1 tbsp garlic powder
- 2 tbsp oregano
- Olive oil
- 2 lemons (juiced)
- 1 bag peeled shrimp
- 1/3 cup olives stuffed with pimiento or black olives
- Salt and pepper, to taste
Directions:
- Get ready. Position a rack in the middle of your oven and heat it to 400°F.
- Make the dressing. In a medium mixing bowl, add the lemon juice, fresh garlic, oregano, garlic powder, and pepper, and whisk vigorously to combine. While whisking, drizzle in the olive oil and continue whisking until emulsified.
- Coat the vegetables. Add the vegetables to the bowl. Cover with a lid and shake to coat, then spread onto a large sheet pan.
- Add the rest. Nestle the shrimp and olives in between the vegetables.
- Bake. Bake on the center rack of your heated oven for about 35 minutes. For more color, transfer to the top rack, about 6 inches from the broiler, and broil for a couple of minutes, watching closely so nothing burns.
- Finish and serve. Remove from the oven and serve.
